The Blue Coyote Catering Company was founded in 1993 after many trips to New Mexico. I felll in love with the cusine and especially the Green Chili. I returned back to Portland in September of 1993 and informed my wife that I wanted to change directions of my catering company. I wanted to incorporate the flavors of New Mexico into my menu, but I needed a name. At the time I had an old Blue Step Van that we called the Blue Pig and the name Blue Pig Catering flashed through my mind. Just as I was thinking Blue Pig, my wife said "how about Coyote Catering?" My mind quickly changed to Blue Coyote Catering and it's been that ever since.
I only use the freshest ingredients. I blend my own spices and I love to eat the food I create. Catering is my passion. I never run out of food and I always plan atleast an additional 20% then ordered.
I Specialize in SHORT NOTICE CATERING! I got a call on a Friday morning to cater an event the next day for 300 people. We pulled it off with flying colors!! There was another time we were booked to do an outdoor BBQ for 850 and 1500 showed up. We fed them all (there were many trips to United Grocers that afternoon).
